I have looked and looked and I can't find an absolute answer to this question:
I want to make IMBC with liquid pasteurized egg whites instead of meringue powder. After decorating cupcakes, does it have to be refrigerated or is it safe to leave out overnight?
I know "pasteurized" means "safe" but every site I've looked on gives me wishy washy opinions and no facts.

The reason you're not getting a straight answer is beause there is a lot of debate about whether it is safe or not. I make my IMBC either with pasurized liquid whites or with meringue powder. I only refrigerate prior to applying fondant or transporting or if I have a perishable filling. I've never had a problem. However, the "official" word from most healt departments is that it must be refrigerated. If you do refrigerate the cake, make sure you bring it out and let come to room temp prior to serving.

My health dept info was a little vague as well, that's why I figured I'd ask the people who really know!
