Using Smbc

For all those who use smbc how long can it be left out at a party/wedding? I would really like to use this on a cake but don't want anyone to get sick. Also, how long will it keep tightly wrapped in the freezer? TIA!

you can leave it out for about 10 to 12 hours without it spoiling and given that it's not 100 degrees outside the fridge. Keeping the cake in a cool place will allow it to be ok.

I have left it out for 3 days. NEVER had a problem, NEVER spoiled. I know I'm not the only one. Can't tell you about freezing, as I have never frozen it before.

I only use SMBC and have never had problems with it, even after several days. As for freezing, I've used it after several months and it was still great. After you defrost it, you will want to re-whip it, though. If it looks soupy, don't worry, just keep it going and it will come back together. HTH!

Thanks for all your replies!! I don't know of anyone in my area who uses smbc (or anything besides ambc for that matter) so this may be my "hook".
