I have to make a dragon for a cake and I wanted to make it out of modeling chocolate. Should I make it from white chocolate and colour it or should I use the coloured merkins. Is there a lot of difference?

when shaping animals, do you mix the candy clay/modeling chocolate with fondant or gumpaste or just use it by itself. Will it hold up in humidity?
