I think your response was perfect. People tend to exaggerate or not explain things very well.

I'd be willing to bet that this person didn't store the cake properly or left the cut cake uncovered for an extended length of time which would cause any of our cakes to dry out

I know it's easy to say but try not to dwell on this too much, your cakes are beautiful and I'm sure they're delicious too!
