Contracts - Whatd O Uk Bakers Do?

I am in the process of writing a template of my contract that I am going to give to customers. I am a bit confused about ordering and arranging fresh flowers. I had read that some of you tell the bride to liase with the florist and that the flowers should be delivered to the venue prior to the set up of the wedding cake. Will this give you enough time to stick the wire flowers in the seperators etc.. OR can the florist deliver the flowers to your premises first thing in the morning? What if they get delayed? What do UK bakers do? Also, do ALL florists put their wired fresh roses in a posy pick or do you have to do that? There will be no time if you are at the venue nad have just received them. Don't you have to stick in fondant or something inside the posy pick for the flower to stay in place?
