I am looking for a coffee flavored cake recipe. Not a mocha type with chocolate. I know I could probably just add espresso/espresso powder, but thought I would check here. I'm wanting to make a coffee flavored cake with a White Chocolate/ Rum Cream frosting. Thanks in advance!

I like to experiment with doctored mixes, I don't know if you are looking for a scratch recipe or not but here's how I would try to do it.

1 box French Vanilla cake mix
1 1/3 cup fresh strong coffee or espresso with 1/4 powdered cappucino mix dissolved in it
1 cup flour
1/3 cup oil
1 cup sugar
1 cup coffee flavored yogurt
4 eggs
1 box white chocolate or french vanilla instant pudding
and maybe a tsp or 2 of LorAnns coffee flavoring

That is what I would start with, taste and adjust from there.

8 eggs- whole
3 c sugar
beat on high for 5 min until pale yellow and fluffy

lower the speed and add:
1 c oil
1 c orange juice or water
2 tbsp vanilla
3-4 tsp coffee- dissolved (in a drop of hot water)
1/4 tsp baking soda
2 tsp baking powder
3 c flour

bake at 300 for 40 min
I generally use a pan that is 9.5 X 12 and it bakes up pretty high.
