I want to do some sugared fruit for the top of wedding cake. The directions I have seen say to coat the fruit in egg white and then sugar them. Does anyone know of a different option than egg white. I don't want to put raw egg white on them if I can avoid it.
Take thinned piping gel or put a little water i some light corn syrup and brush it over the fruit, then sugar it. I've done it that way before.
