I think the best and most flavorful way to make it is to add crushed freeze dried strawberries to a luscious vanilla butter or vanilla cake. Extracts are tricky and imitation strawberry is very different from real strawberry goodness. It really depends on what is wanted.I would use the dried strawberries. The freeze dried strawberries have all the color, flavor and none of the acidic moisture that makes havoc of cake and icing. Crush it all smooth or leave some smallish sized chunks(pea sized). Either way would be great.

Edited to add: you can usually find them at a whole food store or health food store.

i would type in on my home page.. strawberry cake from scratch... you will probably see lots of them.. lots of people use frozen berries in their batter... you don,t have to use a mix or jello.. so try that. i thought there were some on this site under scratch recipes.. hth

Order some on-line. From what I read before cakes with real juicy strawberries fall apart and are soft.
