I used a large pretzel covered in fondant. Used two thin pretzels on the top to attach the leaves. Hope this helps. good luck

Hi, and welcome to CC!
It really depends on what look you're after. I've done palm trees in royal icing, fondant w/ tylose, buttercream, and the pretzle method as mentioned above. Use a leaf tip for the fronds.
