thanks all for the awesome suggestions! i will keep them in mind at the consultation monday. at that time i will see how flexible the bride is with what she wants and of course what i am willing and able to do for her icon_smile.gif

mike: i think i would need an agbay to successfully accomplish the double torte per layer :\\ alas, that is presently on my wish list...

I think our best bet is to collar your pans and over fill them to get a 3" tier and torte that twice. Then you will have a normal height for your tiers and won't have to bake an extra layer.

I do hope that she is more flexible though. If she is looking for extra height then definitely charge extra! icon_biggrin.gif
