mike: i think i would need an agbay to successfully accomplish the double torte per layer :\\ alas, that is presently on my wish list...
I think our best bet is to collar your pans and over fill them to get a 3" tier and torte that twice. Then you will have a normal height for your tiers and won't have to bake an extra layer.
I do hope that she is more flexible though. If she is looking for extra height then definitely charge extra!
