I am making layered cakes with fillings of white chocolate (pudding made with milk) & a raspberry filling with real berries. My question is if the cakes are covered in fondant can i leave them out overnight or do I have to refridgerate with the fondant on them? Thanks for your help

Because you are using perishable fillings, the cakes will have to be refrigerated. The fondant will be fine.

When you take it out of the frig, if you get any condensation, just don't touch it, it will evaporate.
