Ok so a friend of mine asked me to make her 4 dozen cupcakes to be delivered on friday. I spent all morning baking, filling and frosting all 4 dozen. She just called me and said that she now needs me to deliver them on Monday. She wants the same cupcakes, so my question is should I freeze them or refrigrate them to last till monday?
Here are the flavors and fillings
Lemon cake, lemon curd and seven min meruange icing
chocolate cake, salted caramel filling and dark chocolate buttercream
mint chocolate cake and mint buttercream
yellow cake, pastrey cream and dark chocolate icing.

I am a mean person. I would tell her to come pick up her cupcakes and store them in her freezer until Monday.

Tell her they will be ready tomorrow. What she does with them until the is up to her.

Texas_Rose you are NOT a mean person! icon_razz.gif You are one of the most considerate persons I've seen on this site. BUT, Texas_Rose is absolutely right. Your friend needs to be coming for those cupcakes and holding them herself until when ever she needs them, PERIOD!

texas rose is correct.. she needs to pick them up and store them herself. not you..
