Unrefrigerated Cakes

i'm making 2 cakes for someone. communication problems prevent me from knowing if she will actually pick them up tomorrow. if she's gonna pick them up tomorrow, they need to be completely ready tonite. i know she wants them for thanksgiving.

i'm doing a carmel cake and a chocolate cake with ganache icing. the carmel frosting and the ganache icing are completely from scratch. i use real heavy cream, real chocolate, nothing artificial.

if the cakes are frosted tonite, should i refrigerate them and tell her to refrigerate them until thursday morning OR will they be ok unrefrigerated until thursday nite?

or simply put, how long will they be safe unrefrigerated?

When did you bake them? 4 days is pushing it even if you refrigerate them.

Scratch cakes obviously don't have preservatives so it's tough to bake this far ahead without freezing them.

I'd probably freeze them....wrapped very very well, but even then there's no guarantee since they're already iced.
