Cakes Sometimes Have An "off Taste" - Why?

Whenever I bake a chocolate cake it is still fresh after a week - if it lasts that long. However, usually when I bake a white or yellow cake, by about the third day it has an off or stale taste. Can anyone help me with this problem? Thanks!
