I have never made a cake with fresh starwberries. Someone wants me to make one with whipped cream and fresh strawberries. It will be a fondont covered cake. How do I do this? How soon before the cake is due? what about refigeration? So confused....help.

Make stabilized whipped cream and slice the strawberries and fold in. Make sure you use a good icing dam. You'll want to fill and ice and decorate all the day before at the earliest. It will have to be refrigerated. Make sure you don't touch the fondant when it is right out of the fridge, let it sit for a bit to dry off.
