Cake Made Wednesday For Saturday

Hi,

If I bake/torte/fill on Tuesday, decorate on Wednesday and serve on Saturday, will the cake be okay?

My other option is to bake/torte/fill on Wednesday, decorate on Thursday and serve on Saturday. The problem with this option is my friend wont be able to pick it up until late on Thursday...depening on how long it take me to do. I am going away on Friday.

I would prefer option 1 but need to know if the cake will be okay. I can store it in the fridge.

Personally, I believe in a 5-day serving window, from the time the cake is baked until it's time for the cake to be tossed. Some cakes are stale and dry and have an off taste in 3 days, some in 7.

I would not bake on Tuesday a cake due on Saturday, however. That is too long.

Bake on Tuesday and freeze until Thursday, then decorate on Thursday. If you are using any kind of perishable fillings, you will need to keep the cake refrigerated, but if not, keeping the cake boxed at room temperature should be just fine.
