Hi There,

I recently read in one of my cake books that you can make sugar syrups to put onto sponge cake, before filling. I wanted to give this a try with a lemon sponge, and drizzle a lemon syrup over the sponge. I just wanted to find out how long the sugar syrup with keep for, and also if it needs to be refrigerated? I will be making it as follows:

250g sugar
250ml water

Boil above mixture and then allow to cool. Once luke-warm, add some lemon zest and a little bit of Limoncello liqueur.

I'll tell you about mine - it doesn't have any zest in it or anything. But once I make it, I use it at room temperature. When I'm done, I put in an air tight container and stick it in the fridge. It's good for about a month in the fridge.

I'm not sure if yours will stay good though since it has the zest in it.
