I need to make dark gray fondant for this weekend and my local cake store is out of black americolor gel...darn Halloween...Anyhow, I have wilton's black gel on hand and I bought Americolor black powder and oil. Which to use? I really don't want it to go green on me. Purple is undesirable but not a deal breaker seeing as the wedding colors are silver and purple

I would use the Americolor powder...I haven't used it before but I am going to be looking for it now!

If you're making your fondant from scratch, then the powder will be OK, but obviously, if you're kneading in color, then the powder won't work.

I use the Wilton black gel all of the time with no problems. It should make a fine dark grey. Their colors are fine--I just prefer the little Americolor squeeze bottles to the small pots.
