I've never used ganache before, but I know you can use it as a filling. I was going to use a chocolate ganache filling, but can I stack cakes with it, or do I need a buttercream filling?

You can absolutely use it as a filling.

You can even whip it up for a bit lighter filling.

I just used this ganache recipe tonight:

This is the only ganache recipe I use - it's wonderful as a filling and/or icing! You can stack cakes with this as a filling/icing too.
