My plan is to flood cookies and from what I have read, I need to let them sit about 24 hours before adding details. On day one when I am flooding, can I do my colors I will be using day 2 and stick them in bags, then just pull them out and use them on day 2? Or day two do I need to rebeat?

They should be ok the next day, longer than that and you probably need to remix.

Cover the tips/openings of the bags with a damp paper towel and then plastic wrap to keep the icing at the opening from drying into cement!

Stick 'em in a ziptop bag to avoid excess air getting through the tip.
Also, give the bags a little massage just in case anything has settled or separated.
