I meant to take the large 3D bear cake & the mini version out of the freezer last night for an order due to be picked up today. I did it as soon as I got up this morning, and it will give me 8 hours before pick up. Will the cake still be frozen then? It's been 3 hours now and it's still pretty solid (the big one, the mini is cold, but defrosted pretty much). I really need to get decorating. Can I decorate it whilst it's still frozen (star tipping with SMBC), and will this stop it defrosting as quickly as it normally would? Help, I'm panicking here!

It should be defrosted by the time the customer picks it up.As for the SMBC...I'm not sure as I have never used it.The icing won't stop it it will just make the icing cold.

In a pinch, I have stuck a cake in the microwave on "defrost" for a few seconds, just to get the defrosting going. Since microwaving starts the heating process in the middle of the item, it helps it defrost faster.
