Keeping My White Fondant White

I am doing a wedding cake next week that is to be covered in white fondant. I always have problems with getting dust and little "particles" in the fondant when I'm working with it. I use vinyl to roll it out on and I always wipe down the vinyl with vinegar water and a paper towel. I really don't want to get this fondant on the cake only to find it got tiny little specks in it.

Any tips?

I think the dust is inevitable. I alway take a soft clean bristle paint brush and brush off my fondant before delivery and when I get it to the venue, just incase it picked up something in transport.
