Okay so I have not done too many cake orders for people, but when I do have a cake order it is usually for a white cake which I have been using the WASC recipe. I have an order for a chocolate cake and the recipe I use for my chocolate cake doesn't rise very well. I did a double batch in an 11x15 pan and it is uneven and is about one inch thick. So if anyone could give me an excellent chocolate cake recipe I would certainly appreciate it! Preferably from scratch, but a doctored chocolate recipe would work as well! TIA![/b]

Sorry I get DH or BC and basically add the same ingredients as you do with wasc and it is so freaking good, especially the triple fudge one ........flies off the plate, no crumbs at left hehehe

2 1/2 cups all-purpose flour
1 1/4 cups cocoa powder
2 1/2 cups sugar
2 1/2 tsps. baking soda
1 1/4 tsps. baking powder
1 1/4 tsps. salt
2 large whole eggs, plus 1 large YOLK
1 1/4 cups milk
1/2 cup mayo
2 tbsps. vegetable oil
1 1/4 tsps. vanilla extract
1 1/4 cups warm water
1 cup melted and cooled chocolate

Preheat the oven to 325F. spray your cake pans with cooking spray.
Sift together flour, cocoa, sugar, baking soda, baking powder and salt in a large mixing bowl.
Mix the eggs, yolk, milk, mayo, oil, vanilla and water in a seperate bowl. Pour wet into dry and beat with an electric mixer on low speed until smooth and combined. Add chocolate about 30 seconds before completly mixed. Scrape down the sides of the bowl as needed.

I always use a rose nail in all my cakes to ensure proper baking.

I was wondering if you can make a WASC cake using a chocolate cake mix. So it would be a CASC. I will have to try that tomorrow! So if I am correct you just substitute a white cake mix for a chocolate one?

Although I dont mix bake I do have this...
Chocolate WASC (macsmom's method ) - MacsMom
2 dark chocolate cake mixes
2 c cake flour (gives it a lighter crumb)
2 1/4 c sugar (extra sugar for moistness)
1/3 c cocoa powder
3/4 t salt (less salt because of the cocoa powder)
2 pkg chocolate fudge pudding mixes
8 egg whites or 6 whole eggs
2 c sour cream
2 c coffee
1 c chocolate milk (extra liquid because chocolate mixes tend to be thick)
1/3 c oil
2 t Nielsen Massey's chocolate extract
2 t vanilla or butter extract

I personally like the chocolate cake recipe on the back of the hersheys cocoa can. I have made many others but that is my most requested.
