I'm making a ganache filling and have tried using non-dairy flavored creamer to make the ganache. Anyone ever try it? How long can the cake sit out without spoiling the ganache? Or do I have to refrigerate it with the fondant on till ready to be delivered?

i've heard ganache has a 2-day shelf life, but if you made it with non-dairy creamer, then I'd imagine the shelf life would be even longer? I always refrigerate my cakes, fondant covered ones too. I like to transport the cake straight out of the fridge too because it seems to be more stable when it's cool. I can't tell you for sure how long you can leave your ganache cake out, but I wouldn't be afraid to refrigerate it just to be on the safe side.
