How Do I Make " Mint Cream" Filling??

Hi all,
My client wants me do to a chocolate cake with mint cream filling. I was thinking of whipping " Bettercreme" with some mint extract??? Does that make minty enough? Does anybody have a recipe of this that they don't mind sharing?

hi, if you will look up user name....macsmom.. then at her profile.. she has a site to go to.. for gourmet flavors.. so many.. lots of c/cers go to her for help.. cakes, icing..fillings etc.. check it out.. i am sure there is a mint one on there.. .hth.. there is long thread about this on this site also.

I've never tried this frosting myself but it sounds good enough to use for a filling?
3/4 tsp peppermint extract
3 8-oz packages cream cheese, room temperature
5 cups powdered sugar
1/2 c. ( 1 stick) unsalted butter, room temperature

can it be chocolate cream mint filling??you could make chocolate ganache and use Andes mint in it..... really good.... that is MacMoms recipe I believe..

I think mint extract in bc would work just fine. If you're worried about it not being minty enough, just add some more! It's pretty strong stuff.

I would suggest that you use Peppermint extract instead of mint. A friend of mine used mint extract in some candy he made -and it ended up tasting like toothpaste!
