...does one need for airbrushing a cake? KopyKakes has a small system with 8-10psi. Their deluxe system is 0-55psi.

For those with experience, how much psi does it take? I have a compressor that'll certainly push the air (Not a little table top one, but a small workshop one. It does have a regulator on it, just have never tested how detailed it'll get.) Will that work, and I can spend more on the brush part itself?

30 psi max,less is better. It you have a regulator and can adjust it low enough then it should work just fine. I think I run around 15 but I can't remember for sure.

They say less is better for the subtle tones on the cake, best range 9-11psi.
