Is there anyone out there that works with chocolate modeling clay? I love sculpting with Cocao Berry brand, but when I pull the piece out of the fridge it sweats and looks awful. I have tried dusting it with cornstarch and that works for awhile, then it starts to sweat all over again. I need some advise ASAP. It apears that all the people on the Foodnetwork all work with the modeling clay and generally it is on large pieces. What am I doing wrong? Thanks in advance for your advise!

I never refrigerate mine. Getting it cold makes condensation thus sweaty.

Just wrap it well or put in air tight container and it will be fine

Does that mean that if you use it to sculpt and then cover it with fondant that the project can't be refrigerated because the chocolate underneath with sweat and cause trouble??
