I want to make my cookies really thick/tall, and I want them to keep their shape, but I also want them chewy inside and creamy tasting. I have several sugar cookie recipes, but I don't have time to try them all out to see which one will give me these results. Does anyone use a specific recipe that they've done this type of thing with?

I always use the NFSC recipe found here on this site. Mine are always rolled a little to the thick side since that is how my kids and their friends like them. They remind me of the circle cookies they sell at Wally World in thickness. Mine are moist inside and chewy, and do great with Antonia74's RI, or buttercream, or even wafer paper designs.
