I've heard about ICES, but are there any other markets that would be good for bakers? I don't want to do too much too fast since I'm really just starting out professionally. But I would love the chance to see and try new things.

There are books and dvd's related to cake decorating that you can buy or just ask the CC community. there are lots of people willing to help.
