I have been using Toba's Glace and love it but I am about to make a whole bunch of football NFS cookies for my son's class football party and I thought I would rather make a chocolate glace then a chocolate colored glace. I have not been able to find a recipe for this. Does anyone have one they use?

giland: I'm making the same cookies! I use a little cocoa in my regular TG (I add brite white or white-white to all my TG). It doesn't take much cocoa, and it is yummy. It sometimes will blotch, even with the white in, so make a few extra in case.

guess I should have mentioned, that I also add brown color, the amount of cocoa you can add isn't enough to turn it football brown.

I also add cocoa - but no brown color - I must use alot more cocoa. And if I need black for my cookies, I add the dark cocoa and a little black color - its prefect for those Halloween cookies.

Just how much cocoa for a single TG glace recipe? Unsweetened? Any special brand? Mix it right in with the other ingredients or mix it w/ powdered sugar first? Thanks!! I'm doing horse cookies this week icon_smile.gif

I got the chocolate extract from The Spice House. I ordered it online.

I mix the cocoa into already-mixed TG, and I add it according to taste. For me, what tastes jsur right chocolaty, is not brown enough, so I add the brown coloring

I also just add some cocoa into already mixed glace - don't think I've ever measured it - for the black icing, I use the dark cocoa - it makes it dark enough that you don't need alot of the black color. And I've done it thick enough to make tassles on graduation caps.
I've used Toba's recipes since "day 1" and I love them.
