How far in advance can i make my fondant figures? I have an upcoming cake that I'd like to do the figures in advance, but i want them to still look great the day of the party and not all dried out. If I kept them covered in a box would they be alright say a week or two? I usually use mmf w/ gumpaste powder mixed in. Any advice??

I always use a 50/50 gumpaste fondant mixture for figures. You can make them a week or two in advance. They will still look great. Just make sure that you store them properly. Put them in the dark, in a covered box that no one is going to touch or bump.

Your figures can actually last for years. =o)

Hi, Totaly agree with Cylstrial. I mix CMC powder with fondant or 50/50. You can make them one or two weeks ahead. I did some teddy bears last week and I'm using them this weekend. So you will be fine. Store them properly and keep away from direct sunlight!
