Need Help With A Cake For My Mothers Birthday

I am trying my first fondant cake for my mothers birthday in October. I am wanting to do something with ameretto, but am unsure of exactly what would work.. Sponge cake brushed with ameretto? would a white chocolate cream cheese filling be good with that? If not, what sort of filling? HELP!!?? icon_sad.gif

I love raspberry coupled with amaretto. I'd brush the amaretto liqueur on your cake lightly (it's strong!), or make an Almond Cake instead. I'd fill it with fresh raspberries, a raspberry mousse (if you can't find fresh), brush on seedless raspberry jam before filling it, or even make an amaretto flavoured buttercream on the inside. Yum!

You can make a simple syrup 1:1 ratio of sugar to water which is heated on the stove until the sugar dissolves then let it cool. You then can add any liquour you wish to the strength and taste you want. This cuts the strong alcohol flavor and saves you money cause good liq isn't cheap.hth icon_smile.gif
