Hi all! Eeek! I'm mid-way through cake prep for a Saturday wedding. I'm doing it from out of town, and emailed myself the berry mousse filling recipe I planned to use, but for some reason the attachment is empty. Can anyone rescue me with a good raspberry cream or mousse filling recipe?

I'm also looking for coconut cream filling if you have that, too! I usually use the Costco mousse recipe, using coconut cream pudding, but here in No. California there is not one single box of such flavor in any store!!!!

Stabilized whipped cream OR whipped topping + seedless raspberry preserves = raspberry mousse
Stabilized whipped cream OR whipped topping + vanilla pudding mix (mix 1 c whole milk w/ ea 4 serving size pkg) + coconut extract/flavor + shredded coconut = coconut cream
