Chrysanthemum Cupcakes.. Help !! Matha Stewart Strikes Again

I have a bride that wants 100 Chrysanthemums on cupcakes - she gave me a copy of the picture - I believe it came from good ole Martha Stewart!??

Here is my question - since she wants so many, can I pre-make the flowers, have them air dried and ready to go.. then bake the cupcakes and assemble ? rather than doing the flower on the cupcake.

Too top it off - she also wants 100 roses on cupcakes
Thats 200 cupcakes and I am just trying to get my time line down without giving up on the freshness of the cupcakes.

yes, you can premake the chrysanthemums.. and roses ahead of time. when i premake. i keep them in a tupperware container. i do not put them in frig. or freezer. hth i love martha stewart..

Which recipe do you use? RI or BC ?

WOW! You have a lot of work cut out for you!

For me, if I had that many to make - I think I would use RI. Because it's supposed to harden up anyway.

I would do buttercream. Royal Icing is like eating rocks to me. I would rather have a soft flower that I can eat. Add meringue powder to the buttercream when making the flowers.
