How long do you freeze your cakes before crumb coating? Or do you? I'm always tearing up my cakes. icon_sad.gif

I don't actually freeze the cake before crumb coating. Sometimes I freeze it after I crumb coat it. For 10 minutes before I put the fondant on.

If you want to freeze it before you crumb coat, I would say no more than 10 minutes either. Just because you don't want your cake to start sweating.
