When To Fill And Dowel A Carved Cake?

I'm carving a cherry shape out of four layers of cake (torted into 7). It will be around 7 or 8 inches tall, so I'll need to add a board and dowels halfway up.

So my question is when do I do the filling and the boarding/doweling? Before or after carving? This is probably obvious, but it's my first carved cake.
