I was wondering what you all think about my question. I have seen advice saying cream cheese icing can sit out. I was considering a cream cheese strawberry filling on a WASC, but would prefer not to have to refrigerate the cake. I suppose I could go with buttercream & strawberry.

Your thoughts?

I would definately refrigerate it. Not sure where you live but the heat will make it pretty soft too. Wouldn't take a chance. Strawberries should be refrigerated too. Sorry to be a kill joy but you asked.

A kill joy would be cutting into a cake to find my filling spoiled! I would rather take your advice and put it in the fridge than have inedible cake! It isn't supposed to be hot up here, but better safe than sorry. Maybe I will fridge the cake but take it out a couple hours early. I just don't prefer cold cake.

You should definitely do that.

Good luck.
