Tier Cakes That Are Bulging At Top

I want to make a three tier cake for my daughters 21st birthday. I want to do the fatter at the top of each layer cake. How do I do that? Do I cut away what I don't want or build up the tops? Please help!!!

like narrow bottom, and top heavy? you just carve away what you dont want. probably better done with a cake that i reaonably sturdy though.
