How far in advance can I ice and fondant a cake and still have it "fresh" for a wedding? I have an HUGE wedding in October, and I usually bake everything a day or two before. Obviously, I can't in this case.

Can I fondant a cake two days ahead, put it in the fridge and still have it be OK for the wedding? I'm wondering how I'm going to ice and fondant all these cakes (no room before they are stacked to just lie around my house in boxes).

It's going to be a 5 tier monster, with many satellites.

I have iced and covered cakes 3-4 days before..They are always fresh.The fondant acts as a barrier to hold the frshness in.Sometimes you don't have a choice when you have many to do in the same weekend.
