So, I have a great client (MOB) that has booked previous cakes with me and now a wedding cake and grooms cake due for Saturday. However, bride needed a gluten free cake and I don't do that. MOB wanted to know if I would decorate a gluten free cake if they provided it as the top tier (6 inch square). I agreed .... as long as I had it by Thursday.
Here's the problem...they showed up today with the gluten free cake and filling
MOB says the cake freezes really well.....so I am thinking that I will freeze it until later in the week.....but what about the filling? It is a gluten free chocolate filling (looks like a thick ganache). Would you freeze this too?Any suggestions?
