For the 1st time I am going to be creating a topsy turby cake. I have seen numerous videos and I see that they cut out the middle so that the next cake can fix.

icon_redface.gifQuestion: Do you really need to make that hole in the bottom cake to make a topsy turby cake. I feel as it messes it up soo much. Cant i just carve them and balance them really good.???

Thank you for your advice ahead of time

You can do it any way you like however, if you want it to be stable I would highly recommend cutting it out to make it level.
