Question About Fondant Covered Cake

Hello! I was needing to know how fresh does a cake stay if covered with mmf? I have 3 cakes to do for the same day (what was I thinking) one will be a carved 3D tow mater (cars) cake covered in mmf and I was wandering how soon could I make the cake for it to still be fresh on Saturday when its due? ANY help will be awesome, I am trying to schedule them all out! Thanks

When taking the Wilton Fondant class, I was told that since the fondant completely covers the cake that it preserves the interior. The fondant keeps the cake fresh.

I think that you could start a couple of days ahead of time and make sure the fondant covers the entire cake, including the bottom edges, and that they should be alright for Saturday.

What does everyone else think?
