I made an Italian Rum Cake for the first time the other day and used a stabilized whipped cream frosting as a practice cake that I have to make for my mom's boss. I thought it tasted very good but my worst critic (my mother) didn't like the taste. Per her critique, she said that "the cake and fillings are great but the I don't like the frosting". The frosting has held up over 2 days in the fridge and it tastes like....well...whipped cream. I don't know whether it is her trying to sabotage (she'd do that) or if there is a better frosting I could use on the cake.

Can anyone help with any suggestions on whether I should stick with the whipped cream frosting or give suggestions on compatible frostings. I'm about to pull my hair out icon_cry.gif

Thanks in advance.
