How Long Can A Cake Sit Out?

I have a wedding cake for Saturday. I don't have room for refrigeration. How long after I bake the cakes can it sit out?

What type of cake is it and what have you covered it with kdnicoson ?

A lot of people bake their cakes on Wednesday or Thursday for a Saturday wedding. It works out just fine. I like to use a moistening syrup if I bake on Wed or Thurs. It doesn't need to be refrigerated.

The issue of refrigeration comes into play when you are using a filling that has to be refrigerated. What kind of filling are you using? If it's not perishable, you'll be fine with the cake sitting on your counter.
