I'm new at all this... Currently using Wilton gel colors. Frusterated with the darker colors. They never come out dark, the more color I add, the worst it tastes!! Is there something else I should be using that will come out dark, and not taste so horrible? My biggest trouble is the black and red colors. Any advice would be helpful!!!!

IMO Chefmaster Liqua Gel is the best there is for black and red (or any color). They are concentrated so you use very little, get immediate results, and no bad or bitter taste. You don't have to start with brown to get black or pink to get red.
