Can I bake a potato, put it in the frig then warm it and eat it the next day?

I need to save some time this weekend, I am cooking a big dinner so it would help if I could do this ahead of time. TIA!

Personally, I'm not keen on re-heated baked potatoes - they tend to lose that lovely fluffiness. You know you can part-microwave and then crisp them in the oven? I do this: microwave 3-4 at a time for about 10 minutes, then put them in a 375 oven for around 45 minutes.

NB - Don't want to be a downer, but there are food safety issues with potatoes and botulism - don't wrap in foil, and make sure to cool them quickly. http://www.personalmd.com/news/a1998062515.shtml
