I covered a tiered cake in fondant that was filled with whipped ganache. I used a cream substitute made from non-dairy whip. How many days can this cake last at room temperature and still be fresh? I would prefer not to freeze it (for lack of space) but I need it to last until Saturday. What do you think? Thanks!

I don't know about a cake being "fresh" after sitting there for a week.....
I do know you do NOT want to freeze fondant...it ruins it....

I really don't know but a week for me seems too long to stay in room temperature.

cake its self will stay fresh for 2 weeks onces sealed with icing. warp it really good put in fridge if you can and it will be fine. Ganache will keep for months. Personaly I wouldn't keep a cake that long but it works.
