Okay, I just finished my very first cake with MMF. I'm really happy with how it came out! It was sort of a trial run for my baby's 1st birthday cake next month.

My question is about some leftover fondant I have. Will it keep for awhile or should I toss it? Right now it's covered in shortening, wrapped in plastic wrap and sealed in a baggie in my pantry. How long can it hang out there? Can I refrigerate or freeze it and use it again next month?

you can store it in the fridge for a long time, if it's well sealed. I've stored it up to 3 weeks and it was fine. I just let it come to room temp. before unwrapping it and using it. hope this helps!

I coat my mmf with shortening, wrap tightly in plastic wrap or vacuum seal in plastic.

I leave it on my work station at room temp. I've never refrigerated it, the recipe I use doesn't require it.

I coat it in shortening as well. Saran wrap it, ziplock bag it, and then stick it in an old Satin Ice bucket that seals shut.
