I am having issues with my royal icing. It is either too stiff to pipe with out getting hand cramps or my rose petals wilt. I am using mer. powder and Wiltons recipe. Please help! I have to make 100 roses by sat and I just cant get it rite. Thanks
There is a balance between too stiff and too soft. You just have to find that balance.
It may help you to pipe your bases first and allow them to harden for half an hour or so, and then proceed to pipe your petals.
The stiffness of RI that I find ideal for me is 1 pound of powdered sugar (by weight), 3 Tbsp meringue powder, and 5 Tbsp plus 1 tsp of water. Mix for 7 minutes.
