I made my 50th birthday cake on a weekend that I was spending 3 days feeding 150 college guys breakfast, lunch and dinner, so you can imagine the time crunch/restraint I was under. The top tier was left over and when I cut into it at home, the cake was 8 days old and was JUST STARTING to taste like a grocery store bakery cake.

I'd probably bake both cakes on Wednesday, decorate the fondant one on Thursday, and decorate the baby shower one on Friday.

I've decorated cakes on Thu that were for Sun, & they were just fine even several days after that.
